The clam of choice for most recipes is the Littleneck Clam because they are the most flavorful and smallest of the hard shell clams available. Littleneck clams are slightly chewy and have a salty taste and can be used in soups, stews or casseroles. Mostly they are eaten steamed and served on the half shell with melted butter. Clams are a very healthy food and used quite often as cocktail h'ordeurves and make a wonderful addition to any clam recipe. |
